Bacon Birthday Brunch

I love my baby brother more than anyone in the world. So to celebrate his birthday, I wanted to give him one of his favorite things in the world… Bacon. So here was my challenge. To make a whole bunch of things with bacon and throw him a brunch. What was on the menu?

We had:

  • Bacon wrapped lil smokies dipped in corn batter and deep fried
  • Sugared bacon wrapped breakfast sausages
  • Cinnabacon Buns
  • Bacon Pancakes
  • Candied Bacon on a Stick
  • Bacon Wrapped Shrimp skewers
  • MIEMOsas
A lot of this was just brainstorming a long the way, and I’d love to share how I did it with you!
Sugared Bacon Wrapped Sausage
If you are into savory sweet, this is a good way to go. Take a pack of precooked breakfast sausages, I used Jimmy Dean maple sausages that came 12 in a pack. I cut them in half and wrapped it with 1/3 of a slice of bacon. I mixed 1/3 cup of packed brown sugar and some chinese 5 spice then rolled the bacon/sausages in it. Place on a sprayed cookie sheet and cook on 300F for an hour or until bacon is cooked!
Cinnabacon Buns
In the desperate need to save time (and I still didn’t make all the food before guests arrived) I bought a tube of the cinnamon rolls, unraveled it, and rolled it back up with a piece of uncooked bacon. Follow directions on can on how to cook it, them top with frosting! My brother said he could taste the bacon fat in the frosting too haha!
Candied Bacon on a Stick
Another sweet savory treat…candied bacon…on a stick… because meat always tastes better on a stick, amirite?! Also the easiest thing to make. I took a thick sliced bacon, skewed it up, rubbed both sides with brown sugar then stuck it in the oven to brown. I flipped it and rubbed some more brown sugar on top and finished cooking it. Don’t leave it in too long, it could get rubbery.
Bacon Wrapped Corn Puppies
This is pretty self explanatory. bacon wrap smokies with bacon, and bake until bacon is brown. Stir in cornbread batter and deep fry. In the words of Emeril BAM!
Bacon wrapped grilled shrimp
These were DEEEELICious. I used this recipe. Well I tweaked it a little, but it was super yummy and I would do it again, without the bacon since I’m a little “bacon’d” out for the moment.
Not pictured are the bacon pancakes. All I did was make pancake batter, and after I pour the batter on the griddle, just sprinkly freshly chopped cooked bacon pieces into the batter, then flip when ready. Top with your favorite syrup and pig out! For the MIEMOsas, I used peach/mango/grape juice instead of orange juice, and champagne with a fresh raspberry in a fluted glass.
